Bimbache Vinícola is the exciting project of Rayco Fernández and Pablo Matallana. After their first wine, Puro Rofe, on the island of Lanzarote, they jumped to the island of El Hierro in 2018. The territory is a true wine-growing paradise, with a reserve of unique native varieties and a rich diversity of soils and climates. They work their own vineyard in organic, as well as leased to other small winegrowers. Bimbache Blanco 2018 is an assembly of Verijadiego Blanco, Listán Blanco, Baboso Blanco, Gual and Pedro Ximénez. Just 2,000 bottles of a fantastic singular white wine accompanying hedgehogs, nettles, caixetes and all kinds of salts and sea preserves.



Bimbache Blanco 2018 is a coupage of Verijadiego Blanco and the minority varieties Listán Blanco, Baboso Blanco, Gual and Pedro Ximénez. It undergoes a gentle pressing and the fermentation was carried out with its own yeasts in stainless steel and Austrian oak barrels, where it rested for 12 months. It was bottled without filtering or clarifying. Just 2,000 bottles.

TASTING NOTES (Published in El Club April 2020)
Bimbache Blanco 2018 has a seductive straw yellow colour, very limpid and bright. On the nose it is very expressive and unique, with intense citrus aromas reminiscent of lime peel and ripe stone fruits, with a hint of pineapple, a background of dry aromatic herbs such as fennel and bay leaf and a slightly saline finish. On the palate it has a silky and dense texture backed by an intense freshness that makes it agile on the palate. Intense and pleasant aromas of lemon and salty touches that persist at the end of the mouth. A delicious white wine that surprises with its aromatic complexity and freshness. To enjoy now and for the next 7 years, accompanying all kinds of fish, grilled or with sauce, raw seafood, sushi and spicy dishes with curry. Perfect served between 8 and 10ºC in the Riesling glass from the Vinum de Riedel series (6416/15) or in the Viognier / Chardonnay from the Veritas de Riedel series (6449/05).
