Santa María de Retuerta, an old Estate with nearly 900 years of winemaking history, has a total area of 700 ha. The winery is located in Sardón de Duero, on the slope that goes down to the left bank of the Duero River. In the 1970s, the former owners uprooted the last vineyards. After extensive geological studies, replanting began in 1991 according to soil types.

The vineyard area comprises 190 hectares, the vast majority cultivated with red grapes: 70% with Tempranillo, 10% with Cabernet Sauvignon, 10% with Syrah and a small amount with other varieties such as Merlot, Petit Verdot, Malbec or Graciano. Pago La Raya is a small Sauvignon Blanc and Verdejo vineyard with which its bottle-aged white, Le Domaine, is made. The vines are planted with a medium density and are grafted on low vigor roots. The vine is trellised, allowing a more homogeneous maturation. Green pruning is carried out to control the performance of the strains and leaf removal to balance the plant.

Ángel Anocíbar, doctor in oenology and ampelography from the University of Bordeaux and oenologist of the year in the International Wine Challenge 2005, is the Technical Director. Pascal Delbeck, winemaker at Château Belair (Saint-Émilion) participates as an advisor in the management of the project from the beginning. The winery is one of the most modern in Europe, with 10,000 m2 of facilities and numerous features and technological innovations. Among them is the use of gravity for each of the vinification steps and the existence of numerous stainless steel vats –80 in total–, with different capacities for independent microvinifications. This ability to vinify separately makes it possible to produce a wide and diverse variety of wines. The ageing room is located on the flank of a hill, in order to naturally control the temperature and guarantee its perfect evolution. The barrels are individually suspended on shelves specially designed to facilitate racking without having to move them.
