ELABORATION
Pago de Carraovejas 2017 is a coupage made up of 94% Tempranillo, 4% Cabernet Sauvignon and 2% Merlot. The vineyards are spread over different slopes of the valley and in the moor, at an altitude of more than 900 metres. Planted on tertiary geology soils, limestone marls appear on the surface with the presence of clays and sandstones. These are austere soils, which put a great strain on the vines. The grapes were harvested by hand after exhaustive monitoring during their ripening cycle and after a first selection in the vineyard. He went through a cold chamber and selection table. It was concealed without crushing and the must was moved by gravity and fermented with native yeasts from the farm itself. The wine was aged in French and American oak barrels for about 12 months, after which it was clarified with natural egg white and bottled in the spring of 2019.
