Pedro Parra y Familia Imaginador 2017
is made with Cinsault, a variety that he considers to be somewhat similar to Grenache and Pinot Noir, from four different vineyards located in Itata. Cinsault is only found in the town of Guarilihu, in the coastal area of ​​the region, 19 km from the sea, an area with very sandy and silty granites, decomposed, with a lot of quartz. This geological characteristic gives it a fineness and a high quality mid-palate, always leaving a chalky sensation on the palate that comes from the calcareous rock. The vineyards are dry land and are divided into plots with an average size of 1.89 hectares with a density of between 6,000 and 8,000 vineyards to work them following a respectful viticulture that avoids chemicals and machinery. The grape mix varies with each vintage. After its manual harvest, it was fermented with a minimum initial sulfur correction at low temperature for about 14 days and minimal interventions throughout the winemaking process. This is followed by a maceration that lasts about 20 more days. Depending on the vintage, the whole bunch is used, varying from 20 to 100%. Ageing in cement vats and wooden barrels for 10 months, and another 6 months once bottled. 15,000 bottles have been produced.

Pedro Parra y Familia Imaginador 2017 has a nice cherry garnet colour, medium intensity and very bright. On the nose it is a symphony of ripe red fruits reminiscent of raspberries, currants and cassis accompanied by intense smoky notes and a spicy point of cloves, black pepper and pink pepper. On the palate it has a very silky and ethereal texture, light on the palate and a long finish where hints of cherries, toasted caramel and coffee persist. Perfect to accompany a table of sausages, grilled vegetables and meats, and spicy dishes. To be enjoyed from now on and for the next 5 years, between 14 and 16ºC, in the Old World Pinot Noir glass from the Veritas series by Riedel (6449/07) or in the Chianti glass from the Vinum series by Riedel (6416/15).

Imaginador is the most important wine in the house, being the essence of the wine that I seek to make and drink. It is a wine that seeks to be fine, delicate and of great drinkability. In this way, the development of heavy, round, dense wines is avoided, ”says Parra.
