Amontillado

Amontillados are born from the combination of biological upbringing, under "velo de flor", with oxidative ageing. This particular method of elaboration makes them very unique, sharp and complex wines, amber and very persistent on the palate. Ideal with canned fish, especially sardines and anchovies.
