Tradition Pedro Ximénez VORS is a fantastic sweet wine made by one of the few wineries in Marco de Jerez that sells, almost exclusively, very old wines. After the “asoleo” –the process of dehydration of the grapes in the sun– the musts were fermented partially and were aged for 40 years using the traditional solera and criaderas system. Fragrant on the nose with the scent of hay, licorice, tobacco, hazelnuts and toasted caramel. On the palate it is generous and unctuous, with a very long persistence of aromas of prunes, balsamic touches and toffee. The label reproduces a work painted by Pablo Picasso that is part of the winery's private art collection. We recommend serving fresh and enjoying it alone or with desserts of dried fruits or aged and blue cheeses. A beautiful bottle that once opened can be kept for more than a year.
